Miami Grill has long been a staple in South Florida, offering a menu that blends classic American fare with the region’s vibrant flavors. With a focus on quality, customization, and a welcoming atmosphere, the franchise continues to evolve while staying true to its commitment to excellent customer service. We sat down with regional manager Jorge Arce to discuss what sets Miami Grill apart, how it maintains consistency across locations, and how it continues adapting to an ever-changing industry.
Freshness is at the core of the Miami Grill experience. “Everything we make is made to order,” Arce emphasizes. Whether it’s crispy mozzarella sticks, seasoned fries, beer-battered onion rings, or their signature wings, every item is crafted with care. Guests can choose from a variety of house-made sauces like sweet chili and Chipotle BBQ, as well as classic options like marinara and honey mustard. Customization is key, especially when it comes to wings. “We have four different types, including crispy breaded wings, and we offer various sides to go with them,” Arce explains. Instead of fries, guests can opt for coleslaw, a side salad, or onion rings, tailoring their meal to their preferences.
For Arce, Miami Grill isn’t just a job—it’s been part of his life since he was 18. Working his way up through the company, he now manages multiple locations and considers the restaurant’s culture a perfect fit for his values. “Miami Grill has been with me the whole time; it’s like second nature,” he shares. The restaurant aims to cater to everyone, offering wings, salads, and healthier options to appeal to a diverse range of guests. Its locations attract both locals and international visitors, creating a melting pot that reflects the essence of South Florida. “I’ve met people from all over the world. They leave happy, sometimes with a collectible cup or a t-shirt as a souvenir.”
As a franchise, maintaining uniformity is crucial, and Arce makes it a priority to visit stores regularly. “It’s very important that we get the same crunch of the fries, the same batter on our fish, and the right portion of everything,” he says. Beyond food quality, customer satisfaction remains a top concern. Engaging with guests and gathering feedback is a routine part of his job to ensure expectations are not just met but exceeded.
The connections built with customers extend beyond the dining experience. Arce fondly recalls a time when a local high school marching band made Miami Grill their post-game tradition. “Every Friday night after football games, about 150 kids would come in at once. It was such a rewarding experience to serve them and see them keep coming back.” The tradition grew so much that they even hired a DJ to turn the gatherings into a celebration.
Keeping up with the evolving dining landscape, Miami Grill underwent a major rebranding in recent years. “We changed the whole layout, from the outside signs to the interior design, incorporating an Art Deco, South Beach vibe,” Arce explains. The goal was to set Miami Grill apart from other burger and wing joints. “We don’t just want to be another fast-food place. We want a great vibe, something that keeps people coming back.”
Customer feedback plays a significant role in shaping the Miami Grill experience. “Guests give great suggestions—sometimes they customize their orders in ways we hadn’t thought of,” Arce says. Whether it’s a new sauce recommendation or a unique way to prepare wings, Miami Grill values its customers’ creativity and input.
While the menu is packed with delicious options, some items consistently stand out. “Our number one seller is the Philly Cheesesteak—no question about it,” Arce reveals. Wings come in as a close second, allowing guests to mix and match flavors and styles. “Personally, I love the Philly Cheesesteak ‘The Works’ style,” he adds, highlighting one of the top-tier choices.

Miami, if you love a beautifully done omakase, this is one to have on your radar.
There is a new omakase concept opening this spring on Coral Way, and it already feels like the kind of place people will be trying to get into early. Takay is an intimate 10-seat experience created by founders Glen Kotlyarski and Yoni Matz, bringing together serious culinary pedigree with a very intentional, guest-focused vision.
Let’s start with the people behind it, because that is really what defines this concept.
Chef Glen Kotlyarski leads the culinary experience, bringing more than 2 decades of fine-dining expertise. His background includes the Jean Georges group and Miami’s Michelin-starred Hidden, and that level of precision and discipline is felt in every course. His approach draws from traditional Edomae sushi techniques, while staying grounded in seasonality and balance.
Alongside him, co-founder Yoni Matz brings a strong hospitality perspective shaped by years of building and operating restaurant concepts. His influence is clear in the overall experience, which is designed to feel warm, welcoming, and engaging rather than overly formal or intimidating.
And you feel that from the moment you arrive.
The space, designed by Japan based architecture firm KTX, is quietly stunning. Guests enter through a Japanese Zen garden, setting a calm and intentional tone before stepping inside. The interior blends traditional Japanese craftsmanship with subtle Miami influence, featuring natural materials, soft lighting, and a sculptural wooden wave installation inspired by The Great Wave off Kanagawa. The entire room is designed to slow you down and bring your attention fully into the experience.

Takay’s omakase follows a classic Edomae style, with two nightly seatings, each centered on a 17- or 20-course progression. Seafood is flown in from Japan and paired with seasonal ingredients from local farms, allowing the menu to evolve continuously.
The experience moves through sashimi, nigiri, and composed dishes, with each course prepared directly in front of guests and thoughtfully explained. It feels interactive, personal, and immersive, making the entire evening feel intentional.
It strikes that rare balance where the experience feels polished and high-level, but still comfortable enough to fully enjoy without overthinking it.
When it opens, Takay will offer a 17-course signature omakase at $225 per person and a 20-course extended omakase at $275. Each seating includes a welcome beverage, with optional sake, champagne, and wine pairings available.
Takay is located at 2296 Coral Way in Miami and will be open Tuesday through Saturday with seatings at 6 pm and 9 pm.
In a city known for large, high-energy dining scenes, Takay introduces something a little more intimate and intentional. It is the kind of place that focuses on the details, and those are usually the ones that stand out the most.
