The starters at Sourbon showcase the kitchen’s ability to elevate familiar comforts and present refined classics with equal skill.

We began with two very different, yet equally impressive, takes on soup. The French Onion Soup Gratinee was everything you want it to be—a rich, deeply savory broth laden with sweet, caramelized onions and topped with a perfect blanket of bubbly, golden-brown cheese and a perfectly soaked brown-bread crouton. It was a masterclass in comfort, a delicious yet familiar take on the french staple.

In complete contrast, the Buffalo Roasted Tomato Soup was an unexpected remix of the well-known savory classic.The nostalgic creamy tang of a classic tomato soup was given a brilliant addition of crispy bacon bits, which added a salty crunch while the generous chunks of whole roasted tomatoes provided bursts of fresh, sweet acidity. It’s a creative and utterly delicious dish.

For something lighter and fresher, the Sourbon Harvest Salad was a perfect composition. The bed of baby mixed greens was brought to life by the sweetness of craisins and crisp apple slices, the mild brine of feta cheese, and the earthy crunch of toasted walnuts. Tossed in their signature house dressing, it was a well-balanced and satisfying start.

The “wow” factor, however, belonged to the cold appetizers. The Burrata was a thing of beauty. The outer shell gave way to a core of impossibly creamy, stracciatella-like cheese that was pure decadence, served simply to let its quality shine. It was perfectly accompanied by grilled bread and a touch of good olive oil. The Beef Carpaccio was equally impressive. The beef was sliced paper-thin and had a buttery texture that melted on the tongue. Paired with the usual accoutrements of capers, shaved parmesan, and a light, zesty dressing, it was a pristine, elegant dish that highlighted the quality of the ingredients.

Drinks: A Masterful Mixology Program
No visit to Sourbon is complete without a deep dive into their cocktail menu. Our journey began with three distinct classics from the main bar.

The Smokey Old Fashioned was a robust and aromatic choice for those looking for something well-known with a bit of bite (and a bit of a show, as the cocktail is smoked right in front of your eyes). The smokiness was present but not overwhelming, mingling beautifully with the bourbon’s caramel and orange notes for a wonderfully complex sip. The Clover Club was a study in balance, and a perfect choice for those looking for a bit something out-of-the-ordinary. This gin-based classic, with raspberry and lemon, was bright, frothy, and perfectly tart—a refreshing and beautifully crafted cocktail. The Midnight Martini was the epitome of chic, for fans of sweet, fruity concoctions. Served ice-cold, it was a sleek, sophisticated take on a vodka martini, mixed with blackberries for a dark and aromatic, glamorous (and strong) cocktail.

Main Courses: A Tour of European-American Classics
The main courses continued the trend of comfort and elegance, with each dish prepared with clear skill and attention to detail.

The seafood lovers at the table will be in heaven with the Sourbon’s Seafood Pasta. This was a generous, delicious and beautifully composed dish. A tender piece of salmon sat atop a bed of perfectly cooked linguini, joined by plump calamari, juicy mussels, and sweet shrimp. All of it was tossed in a light “a la Provence” style and a vibrant marinara sauce that brought the whole dish together without being heavy.

The Rigatoni Bolognese was a hearty and luxurious take on a Roman classic. The meat sauce, a rich blend of veal, beef, and pork, was slow-cooked to perfection, creating a deep, savory flavor that clung beautifully to the large rigatoni tubes. The roasted tomato sauce added a subtle sweetness, while the sprinkle of Parmesan and the unexpected, delightful crunch of pine nuts on top elevated the entire dish.

For those craving some old fashioned, simply prepared, high-quality protein, the Steak Frites was a resounding success. The steak was cooked precisely to order, with a wonderful sear on the outside and a juicy, tender interior. Served with a generous portion of perfectly crispy, golden fries, it was a classic done right.

Perhaps the most pleasant surprise of the evening was the Roasted Chicken Cornichon. Far from your average chicken dish, the free-range chicken was incredibly moist and flavorful, having been beautifully marinated in a vibrant and herbaceous chimichurri sauce. It was served atop a bed of potatoes and a colorful array of mixed grilled vegetables, all brought together with a smoky, nutty romesco sauce. Every element on the plate worked in harmony, creating a dish that was both healthy and deeply satisfying.
A Nightcap Upstairs: Bar The Lab
Before concluding our evening, we made our way upstairs to discover Bar the Lab, the intimate speakeasy-style bar hidden above the restaurant. The vibe here shifts to something even more exclusive and moody—the perfect place for a final, inventive cocktail.

The mixology here is taken to another level. The Espresso Martini was the gold standard: rich, velvety, and with just the right kick of caffeine and vodka. The Cinnamon Smoked Old Fashioned was a brilliant variation on the classic, with the warmth of the cinnamon adding a festive, aromatic layer to the smoky bourbon (once again smoked right in front of your eyes). But the true showstopper was the Botanical Garden: this cocktail was a feast for all the senses. It was delicious and complex, but the presentation was unforgettable—garnished with a dramatic stalk of lit lavender, which released a delicate, soothing scent with every sip you took. It was a truly magical way to end the night.

For its recent Fresh SoFlo Summer Flavors dinner, Arc Culinary showcased a four-course tasting menu celebrating seasonal Florida ingredients with elevated technique and thoughtful presentation.
The evening began with a refreshing Florida blue crab starter served with avocado, ruby red grapefruit, hearts of palm, and a bright key lime vinaigrette. Light, citrusy, and beautifully balanced, it captured South Florida summer on a plate.
Course two brought a stunning pan-seared Florida snapper, perfectly crisp on the outside and paired with sweet corn purée and blistered cherry tomatoes. The standout element, however, was the sauce. A swap to miso chili oil added layers of umami, subtle spice, and richness that completely elevated the dish. It was one of those bites that makes the entire table pause.
The third course featured a beautifully cooked grilled filet mignon, served with roasted summer peppers, shaved fennel, arugula, and key lime chimichurri. Rich yet balanced, it delivered the kind of bold, satisfying flavor you hope for in a main course.

Dessert ended the evening on a classic South Florida note: a stunning key lime tart that was equal parts creamy, tart, and sweet.
