Michelin Star Chef Akira Back Serves Up Dream-Like Food and Atmosphere at Orlando’s Salt & The Cellar inside the ette Hotel.

If you’re looking for a hotel experience tailored to you, personalization is the priority of The ette Hotel, a contemporary luxury hotel in Orlando that was featured in Forbes and Travel and Leisure. Alex Ekbatani, who founded the hotel in 2021, strongly believes in the importance of health and longevity, which he incorporates into the services his hotel provides.
“At ette, no detail is too cumbersome in the effort to provide our guests with the indulgent experience they deserve,” says Davide Carrara, restaurant manager. “We are discerning, and we know it. We’re bringing to life an immersive experience for the senses – a vacationer’s paradise.”
These services include an alcohol-free bar, onsite therapists and psychologists and an in-house physical exam. The hotel also offers many different fitness options, like Peloton bikes, yoga and Pilates classes and a PENT Fitness gym.
Guests staying at the ette can also expect to have a lavish meal at one of Michelin-star chef Akira Back’s restaurants, Salt & The Cellar. The restaurant offers a unique blend of Asian-Mediterranean fare along with a completely non-alcoholic drink menu filled with creative mocktails. Visitors can dine Wednesday – Sunday for all three meals of the day while on Monday – Tuesday you could come for breakfast and lunch. Afternoon tea is available on Sundays.
“We launch some special menus, but we do gear to pretty much the same standards,” said Davide Carrara. “That’s what people like to see when they come back.”
At Akira’s restaurant, you can dine on unique dishes like Tuna Pizza (his signature dish), Wagyu Street Tacos and Spinach Shahi Salad. However, for more of Akira’s unique flavors, you can visit the LIPA Rooftop Bar for a killer view as well as unique mocktails and food.

The spa experience at ette is also a highlight. There you can enjoy a day of relaxation with IV therapy, facials and massages. It also houses exclusive product collections from Natura Bissé, Tammy Fender, and Florivera to give guests the highest quality skin.
With all its amenities, anyone can find a part of the ette Hotel to appreciate, as its partnership with publishing company TASCHEN supplies its private library for guests to access.

For its recent Fresh SoFlo Summer Flavors dinner, Arc Culinary showcased a four-course tasting menu celebrating seasonal Florida ingredients with elevated technique and thoughtful presentation.
The evening began with a refreshing Florida blue crab starter served with avocado, ruby red grapefruit, hearts of palm, and a bright key lime vinaigrette. Light, citrusy, and beautifully balanced, it captured South Florida summer on a plate.
Course two brought a stunning pan-seared Florida snapper, perfectly crisp on the outside and paired with sweet corn purée and blistered cherry tomatoes. The standout element, however, was the sauce. A swap to miso chili oil added layers of umami, subtle spice, and richness that completely elevated the dish. It was one of those bites that makes the entire table pause.
The third course featured a beautifully cooked grilled filet mignon, served with roasted summer peppers, shaved fennel, arugula, and key lime chimichurri. Rich yet balanced, it delivered the kind of bold, satisfying flavor you hope for in a main course.

Dessert ended the evening on a classic South Florida note: a stunning key lime tart that was equal parts creamy, tart, and sweet.
